Banana Coconut breakfast cookies - Gluten free

This it the recipe that my mom and I used for the video. It's a tasty and easy to have healthy and delicious cookies without having to worry about all the bad stuff like sugar, gluten and anything artificial. I love them!



Prep time - 10 mins

Cook time - 18 mins

Cookie tray with parchment paper



Stand mixer


Ingredients


1/2 cup coconut oil, melted



3 mashed ripe bananas

4 eggs

1/4 cup maple syrup

2 cups old fashioned oats ground to flour

3/4 cup shredded coconut

2/3 cup coconut flour

2 tsp ground cinnamon

1/4 cup chopped walnuts

1/4 cup dried cherries, raisins, chopped dates, or dried cranberries

1/4 cup chocolate chips(optional)


Instructions


Preheat oven to 350F. Line cookie try with parchment paper.

Melt the coconut oil in a microwave safe bowl in the microwave for about 15-30 secs.

Combine the oil with the mashed banana, eggs, and maple syrup, Mix well.

Add the oats, coconut, coconut flour, and cinnamon. Mix well. Fold in nuts, and berries(optional chocolate chips).

Use a small cookie scoop to scoop the mixture into mounds. Roll into a ball and place on sheet. Flatten lightly with a fork.

Bake 16-20 mins or until the bottoms are beginning to brown. rotate halfway during baking.

Remove from oven and cool before transfer.

Cool and serve.
